Happy New Year from Snug Valley Farm

Happy New Year! We started the year off right with eggs from Kelly and Fritz’s chickens, french toast and our pork maple breakfast sausage. Then we got to work checking on animals to make sure everybody was happy, had enough feed and gave some of them clean sheets aka fresh sawdust or hay bedding. In the winter, you’ll notice many updates refer to animal checks and daily chores. On top of those daily chores, this week Ben and our fantastic farmhand Loren will be weighing and sorting cattle, which helps us figure out which animals are almost ready for harvest and which animals need to hang out in the barnyard a bit longer.
DINNER IDEAS TO START THE NEW YEAR OFF RIGHT
BONELESS PORK LOIN CHOPS:
If you’ve never tried these, now is the time. They are incredibly delicious and have a lot of meat on them. We like to heat a cast iron pan in the oven on 400 degrees for 20 minutes. While the cast iron heating, pat the chops dry and generously sea salt both sides. Pull out the pan (DON’T FORGET TO USE AN OVEN MITT) and turn the stove top on high, add 1-2 tbsp. butter and sear both sides of the chops (2 minutes per side). Then enjoy.
